
Rincumditti has been a family recipe for many generations. Most people don’t know what it is and they are missing out. Its a cheesy shrimp sauce type meal that you pour over saltine crackers. This recipe makes about 2 dinners for a family of four.
Ingredients
- 2 tablespoons of butter
- ¾ cup of finely chopped yellow onions
- ¾ cup of finely chopped red pepper
- ½ pound of Velvetta cheese cubed
- 1 can of condensed tomato soup
- ½ cup of macaroni stars or alphabets
- 1 pound of frozen raw shrimp
Recipe
- Defrost the shrimp under cold water and remove the shells
- Boil a large pot of salted water and cook the shrimp for about 2-3 minutes until the shrimp is pink
- Transfer shrimp to a bowl of ice water to stop the cooking
- Cut shrimp into bite-sized pieces
- Cook the macaroni according to the package, then drain
- Fill the bottom of a double boiler about a third of the way full and bring to a boil
- Melt the butter in the top of the double boiler on medium heat
- Add in the vegetables and saute until tender, stirring constantly
- Place the top of the double boiler on the bottom and add in the cubed cheese
- Stir until the cheese is completely melted
- Add in the tomato soup
- Mix in the pasta and shrimp
- Seve over saltine crackers or vegetables
