Rincumditti has been a family recipe for many generations. Most people don’t know what it is and they are missing out. Its a cheesy shrimp sauce type meal that you pour over saltine crackers. This recipe makes about 2 dinners for a family of four.


  • 2 tablespoons of butter
  • ¾ cup of finely chopped yellow onions
  • ¾ cup of finely chopped red pepper
  • ½ pound of Velvetta cheese cubed
  • 1 can of condensed tomato soup
  • ½ cup of macaroni stars or alphabets
  • 1 pound of frozen raw shrimp


  • Defrost the shrimp under cold water and remove the shells
  • Boil a large pot of salted water and cook the shrimp for about 2-3 minutes until the shrimp is pink
  • Transfer shrimp to a bowl of ice water to stop the cooking
  • Cut shrimp into bite-sized pieces
  • Cook the macaroni according to the package, then drain
  • Fill the bottom of a double boiler about a third of the way full and bring to a boil
  • Melt the butter in the top of the double boiler on medium heat
  • Add in the vegetables and saute until tender, stirring constantly
  • Place the top of the double boiler on the bottom and add in the cubed cheese
  • Stir until the cheese is completely melted
  • Add in the tomato soup
  • Mix in the pasta and shrimp
  • Seve over saltine crackers or vegetables
