Pumpkin Apple Muffins

These muffins are a great quick breakfast or even just a snack. They are so fluffy and doughy. If you warm one up, cut it in half, then spread butter on it, they are the best. Another really good type of muffins is blueberry muffins. This recipe is a variation of one from Mel’s Kitchen Cafe. This recipe makes about 18 medium muffins.


  • 1 cup of all-purpose flour
  • ⅔ cup of cake flour
  • 1 tablespoon of pumpkin pie spice
  • 1 teaspoon of baking soda
  • 1 cup of pumpkin puree
  • 1 stick of salted butter melted
  • 2 eggs
  • 1 apple washed and finely chopped


  • Preheat oven to 350℉
  • In a large bowl, mix together the flours, pumpkin pie spice, and baking soda then set aside
  • In a Kitchen Aid Mixer, combine the pumpkin puree, butter, and eggs
  • Pour the flour mixture into the Kitchen Aid Mixer and stir on low until fully combined
  • Hand mix the apple into the batter
  • Evenly divide the batter into 18 lined muffin tins, I recommend using silicone cupcake liners
  • Bake for 18-22 minutes
